A Soup to Keep the Sniffles Away
The past two weeks I have been sick as a dog. Fever, ear infections, sinus issues but thankfully I'm starting to feel a bit better. I love a good soup, especially when I am under the weather. This is favorite of mine and hopefully soon to be one of yours. You can always add in diced chicken and one of my favorite things about this soup (other than it is delicious!) is that it freezes well. I like to make a big batch and freeze half of it for a quick dinner.
Quinoa Sweet Potato Soup
1/2 uncooked quinoa
1/2 TBSP olive oil
4 garlic cloves, minced
2 cups diced onion
1 large sweet potato, diced
2 tsp cumin
1/2 tsp chili powder
1/2 tsp coriander
6 cups broth (chicken or veggie)
1 can black beans, rinsed and drained
sea salt and black pepper to taste
toppings: blue corn chips, avocado, greek yogurt
- Cook quinoa according to package directions. Set aside
- Heat oil in large pot and cook onion and garlic for 5 minutes. Season with salt and pepper. Add in sweet potato and cook an additional 5 minutes
- Stir in cumin ,chili powder, coriander and broth. Bring to a boil and then simmer until veggies are tender (about 15 mins) Add in beans and quinoa right beggar serving.
- Serve and add toppings if desired
