Nutty Butter Popcorn

The truth is I love going to the movies with my husband. I love the hustle and bustle of the movie theater, bringing my movie cup in to fill it with some ice cold water, oh and the smell of the popcorn. Yes, I said smell because that is the only thing I have been doing for a long time when I go to the movies. The calorie and fat count on movie theater popcorn is ridiculous. And lets face it, if I am about to eat something with that many calories and fat, it might as well be ice cream.

I have a confession.  I am one of those who sneaks (shhh!) in an outside treat in my large purse to make sure I have something healthy to munch on during the show. This recipe is a combination of a year of trial and error, deciding which flavors go best. This popcorn is sweet and salty, and the only fats are healthy ones. This is also great to make at home and watch during a Netflix binge of "Parenthood."



Nutty Butter Popcorn

popcorn kernels (fill to max fill line on popper)
1/2 c honey
1/4 c natural nut butter (i like using half almond/half peanut)
1/2 coconut oil
1/2 tsp cinnamon
1/2 tsp salt
1/2 c chopped almonds (toasted ones are really yummy in this recipe)

Air pop popcorn in air popper. Place in a large bowl and add almonds. In a small saucepan combine honey, nut butter, coconut oil, cinnamon, and salt on low heat. Stir constantly until combined, do not boil. Pour mixture over popcorn and mix well. Eat immediately or divide into bags for portioned servings.
