Coconut Greek Yogurt Pancakes

There is nothing I love more than a fluffy, gorgeous stack of pancakes in the morning. However pancakes are usually a no-no when eating healthy. I have seen a million 'healthy' Pinterest recipes where the picture looks amazing, the ingredients are decent, but then they don't have any flavor and usually a pretty weird texture.  Also I am always looking to add in a good dose of protein with each meal, and many 'protein pancakes' call for using protein powder and water...and maybe a banana. There is no flavor and I usually end up covering it with maple syrup to get it down.

But then I thought about how coconut is pretty much yummy in everything, and usually a popular breakfast or dessert flavor. I also love cooking with greek yogurt because anytime you put in a baked good, it makes the texture so light and fluffy. When I make a batch of these pancakes, it makes several, so i usually put them in stacks of three's and then freeze them in freezer bags. When I get home from the gym I will pull out a star, pop it in the microwave for 30 seconds or so and top it off with fresh berries and some almond butter.

Coconut Greek Yogurt Pancakes

1 cup rolles oats
3 TBSP vanilla protein powder
6 egg whites
1 banana
3/4 cup oat flour
 (you can also grind up some oats, but make sure it measures out to 3/4 at the end)
3/4 plain greek yogurt
3/4 tsp baking soda
1/4 tsp coconut extract 
2 TBSP unsweetened coconut flakes
(plus more for topping)
liquid stevia to taste

Blend all ingredients in blender. Batter will be slightly thinner than a normal pancake batter.
Serving Size (3 pancakes)
Macros per serving, topping not included: Protein-21g Fat-3.5g Carbs-16g
