Edamame and Snow Pea Power Salad
Did you know that plant protein has more nutrients gram per gram than animal protein? The phytonutrients contained inside plant protein helps strengthen our immune system and provides us with a stronger ability to fight off disease. Some example of plant protein are quinoa, lentils, nuts and seeds. But the main superstar of plant protein has to go to the soybean. Here is my favorite recipe that is packed with protein and also a great way to use up those fresh garden veggies.
Edamame and Snow Pea Power Salad
Salad:
1 lb snow peas,
sliced on the diagonal
1 lb edamame, shelled
6 radishes, sliced
thinly
½ cup multi colored
quinoa cooked
2 TBSP sesame seeds
Dressing:
4 TBSP rice wine
vinegar
2 TBSP olive oil
4 tsp raw honey
2 tsp toasted sesame
oil
2 tsp soy sauce
1.
Combine salad ingredients except sesame seeds in
large bowl. Set aside
2.
Mix together dressing ingredients and pour over
salad
3.
Sprinkle sesame seeds on top of salad.
4.
Store in fridge until ready to serve
