Cool as a Cucumber Tzatziki

You know the drill....

Open the fridge door, scan its contents, shut the door in frustration that there isn't anything that looks tempting and also readily available. 

If you are like me, this can become an all too frequent occurrence. A great remedy to this is to already have things prepared that a. you like, b. stay fresh and c. taste good. A super easy way to get in your recommended vegetable servings for the day is to already have them cut up and ready to eat. Another important aspect of maintaining a healthy weight is to have an ample amount of lean proteins in your diet. Since I don't eat meat, I rely one meal a day on a dairy source of protein. Low fat cottage cheese and greek yogurt are usually my go to choices. But these tend to be bland and tasteless. I love making dips that pack a punch of flavor and better yet can be prepared and kept in the fridge for days. Here is one of my favorite spring and summertime dips to keep you well stocked with protein and veggies.

P.S. the white sticks are jicama...try it out if you haven't yet!



Cool as a Cucumber Tzatziki

1 large cucumber grated and placed in fridge overnight to drain
3 cups fat free Greek yogurt
2 TBSB fresh dill, minced
1 tsp salt
2 TBSP white distilled vinegar
4 TBSP olive oil
4 large cloves garlic, minced

·      Combine yogurt, salt, vinegar, garlic, salt and olive oil in a medium bowl. Refrigerate overnight
·      Right before serving, add in drained cucumber and fresh dill
·      Serve with vegetables or whole-wheat pita. Also makes a great spread for sandwiches.

Coconut Greek Yogurt Parfait

My girl Chelsey over at Housewife to Hostess and I teamed up to bring you a series of drool worthy, healthy breakfast recipes to get your 2016 resolutions off to a great start! After developing these recipes, I headed over to her house for some feedback and to stare at her gorgeous kitchen. This first recipe is my favorite. In fact when I left Chelsea's house I came home and whipped up a batch to have on hand. It's...that...good...folks. I mean, you really can't go wrong with creamy coconut and fresh berries. The best part is it's low in sugar, high in protein and tons of antioxidants from the berries. 



Coconut Greek Yogurt Parfaits

1 cup non fat plain Greek yogurt
1 TBSP Truvia baking blend
 ( adjust to desired sweetness level)
splash of coconut extract
fresh blueberries, blackberries, strawberries, or raspberries
finely shredded unsweetened coconut flakes

1. Mix together yogurt, extract, and Truvia. Allow to sit in fridge for 20 minutes or until trivia granules have dissolved.

2. In parfait cup layer yogurt, berries, yogurt and more berries on top



3. Top with unsweetened coconut flakes

Protein Berry Crunch

Have you ever had something so good, you crave it every meal of the day? For the past few days, this has been my go-to post workout meal, but I find myself craving it for lunch and at night. It's that good!

Being vegetarian, I am always looking for little ways here and there to sneak in more protein in my diet. I try to eat 1 gram of protein per pound of body weight. So that's...one hundred and...c'mon you didn't really think I would tell you how much I weigh, did you? But yes, that is a good rule to go by when it comes to protein macro numbers. 

After the gym, I come home starving. Like hangry starving. I am always in a rush because that is when I'm getting my kids out the door for school, so I need something quick and easy. This tasty little parfait does the trick. It also contains some healthy carbs which is SUPER important post workout. You need to replenish those muscles with protein and healthy carbs. Plus fiber is an essential part of a healthy diet. The cereal I use in this parfait contains loads of fiber. Fiber helps you stay fuller longer. Whenever I eat this parfait, I am always full for at least 4 hours. This is very helpful when you are looking to lose weight.






Protein Berry Crunch


First thing you will want to do is make some Protein Pudding. 

Protein Pudding

1/2 cup plain greek yogurt
1/2 scoop protein powder (any flavor will work, I chose to use vanilla)
1 tsp of water to thinn it out into a pudding consistency

Cut up strawberries and wash any other berries you want to use

Layer:
Protein Pudding
Berries
Handful of Fiber One Cereal
Pudding 
Handful of Fiber One Cereal
Berries

You can also drizzle some natural nut butter on top. 
Toasted Coconut is also really yummy too. Get creative!
